是所有能产生清凉效果且药性不强的化学物质的总称。最常见的凉味剂是薄荷醇(尤其是左旋薄荷醇)，但由于其浓烈的气味以及对皮肤、黏膜组织和眼的强烈刺激性，故不宜大量使用。因此，不少科学家都合成、提取了新一代的凉味剂。
凉味剂WS23的化学名称为N,2,3-三甲基-2-(1-甲基乙基)丁酰胺或者N,2,3.三甲基-2-异丙基丁酰胺。英文名称为N,2,3-trimethyl-2isopropl butanamide.简称为WS-23 。分子式:C10H21NO，分子量:171.29。其特点为清怡、持久、新鲜、无刺激性辣味、无苦味、用量低。
